About Betty and her Rhubarb Cake:
Grandma Betty’s amazingly huge rhubarb plant in the yard which has now been transplanted into my parents yard when she moved last year to an assisted living home. This cake was so moist inside and crispy on top.
INGREDIENTS
1 egg
1 1/2 c. sugar
1 c. sour milk
1 tsp. baking soda
1/2 c. shortening
1 tsp. vanilla
2 c. flour
1/2 c. rhubarb
Topping: cinnamon and sugar
Bake at 350 degrees for 45 minutes to 1 hour.
